Bhindi Pakodi(Okra)

Tasty Recipe.

Ingredients:

Bhindi (Okra) – 15 small ones

Rice Flour – 2 table spoons
Besan Flour – 4 table spoons

Coriander powder – 1/2 table spooon
Cumin seed powder – 1/2 table spooon
Black pepper powder – 1/4 table spooon
Peanut powder – 1 table spooon
Sugar – 1/2 table spooon

Chpped garlic – 1 table spooon

Cut Cilantro (Coriander Leaves)
Red Chilli pwd – as per your taste
Salt – as per your taste
Oil

Note: You can always vary the quantity and proportion of ingredients as per your taste. You even can include additional items if you feel they enhance the taste of the dish.

Preparation:

Wash okra thoroughly and let them dry.
Cut each okra into four long pieces. Sprinkle salt on these pieces and keep them aside for 10 to 15 minutes.
Now take besan flour, rice flour,salt, chilli powder, pepper powder, coriander powder, chopped garlic, peanuts powder, cumin seeds powder and sugar in a container.
To this add okra pieces and water and make a thick batter. Let it stay like this for 5 to 10 minutes.

Stove top:

Take a wide pan. Pour oil for deep frying and heat it.
Take okras from the batter and deep fry them.
Sprinkle cut cilantro on the fried okras.
Bhindi pakodi is now ready to eat hot.

Bhindi Kurkure(Okra)

Tasty Recipe.

Ingredients:

Bhindi (Okra) – 2 lbs
Corn Flour – 4 table spoons
Besan Flour – 2 cups

Chat masala – 2 table spoons

Cilantro (Coriander Leaves)
Red Chilli pwd – as per your taste
Turmeric – as per your taste
Salt – as per your taste
Oil

Note: You can always vary the quantity and proportion of ingredients as per your taste. You even can include additional items if you feel they enhance the taste of the dish.

Preparation:

Wash okra thoroughly and let them dry.
Cut each okra into two long pieces. Take all pieces in a wide plate and let them dry for 6 to 7 hours. Dont keep them under direct sun.
Then roll these pieces in cornflour. By doing these seeds from the okra pieces will be separated.
Remove all these seeds and let okra pieces dry for another 2 hours.
Now take besan flour, salt, chilli powder and turmeric in a container.
To this add okra pieces and water and make a thick batter.

Stove top:

Take a wide pan. Pour oil for deep frying and heat it.
Take okras from the batter and deep fry them.
Sprinkle chat masala and cut cilantro on the fried okras.
Bhindi kurkure is now ready to eat hot.

Besan Tacos

A simple recipe which children love.

Ingredients:

Besan Flour – 1 cup
Sooji – 1 cup

Curd(yogurt or Sour cream) – 4 table spoons

Sliced Onion – 1/2 cup
cut Cilantro (Coriander Leaves) – 1/2 cup
cut Tomato – 1/2 cup
Cut green chilli – 2 table spoons

Boiled green peas – 1/2 cup

Chat Masala – 1 table spoon
Tomato Ketchup – 2 table spoons

Red Chilli pwd – as per your taste
Turmeric – as per your taste
Salt – as per your taste

Preparation:

Cut onion, tomato, green chilli and cilantro into very little pieces.
Take cut onions, tomatoes, green chilli , cilantro and boiled green peas in a container.Mix all these ingredients well.
Prepare thick batter using besan flour, sooji, sour cream, turmeric, salt and red chilli powder. Let it keep for 15 minutes.

Stove top:

Take a wide pan. Pour oil for deep frying and heat it.
Make pooris(roti) using this batter and fold them in the middle. Fry them in such a way that the two edges would not stick together.See the picture for clear idea.
These are called Tacos.
Fill each Taco with the above made mixture.
Sprinkle chat masala and tomato ketchup on the top.

Spinach Cilantro Snack

A healthy snack for everyone.

Ingredients:

Besan flour – 2 cups

Cut Spinach leaves – 1 cup
Cut Cilantro (Coriander Leaves) – 1 cup

Cut Onion – 1/4 cup

Grated coconut – 1 table spoon
Sesame seeds – 1 table spoon
Ajwain seeds(vaamu) – 1 table spoon
baking soda – 1 table spoon

Bread Crumbs – 1 cup

Red Chilli pwd – as per your taste
Salt – as per your taste

Note: You can always vary the quantity and proportion of ingredients as per your taste. You even can include additional items if you feel they enhance the taste of the dish.

Preparation:

Cut onion, spinach and cilantro into very little pieces. Grate coconut and keep all these aside.
Make fine powder of sesame seeds and ajwain seeds.
Take a bowl and add besan powder, cut spinach, onion and cilantro,salt, red chilli powder, baking soda, grated coconut and above made powder.
Mix all these and make a thick batter using water.

Stove top:

Take a wide pan. Pour oil for deep frying and heat it.
Take a small portion of batter and make any shape.
Then roll it in bread crumbs.
Deep fry this in oil.
Switch off the stove and serve hot.

Tomato chutney is great combination for this.
You can buy bread crumbs in store or you can make at home. Toast white bread slice in toaster. Crush with hands to have bread powder after it is cooled.

Soya Granules Curry

Soya is a very delicious and protein rich food.This simple curry goes well with Rice and Roti.

Ingredients:

Soya Granules – 2 cups
Onion pieces – 1 cup

Tomato – 1 medium size
Green Chilli – 4
Cashew

Ginger garlic – 1/2 table spoon
Garam masala Powder – 1/2 table spoon

Cilantro (Coriander Leaves) – 5 stems

Mustard seeds
Cumin seeds
Chana dal
Urad dal

Red Chilli pwd – as per your taste
Turmeric – as per your taste
Salt – as per your taste

Note: You can always vary the quantity and proportion of ingredients as per your taste. You even can include additional items if you feel they enhance the taste of the dish.

Preparation:

Cut onion, tomato, green chilli and cilantro into very little pieces. Soak soya granules in hot water for 30 minutes. Squeeze entire water from soya granules before adding them to the cooking pan.

Stove top:

Take a wide pan. Pour 2 tea spoons of oil and heat it.
Add mustard seeds,cumin seeds, chana dal and urad dal. Saute them.
After that add onions and cut green chilli and stir them until they are light brown.
Then add ginger garlic paste and turmeric to this and let it fry for 2 minutes.
To this add soaked soya granules and cover the pan with lid.
After 10 minutes add cut tomatoes, salt and red chilli powder then again cover with lid.
After 10 minutes sprinkle cut cilantro and garam masala powder and let it cook for another 2 minutes.
Switch off the stove and serve hot.

Cornflour snack(Mokkajonna mutteelu)

This is a very delicious and healthy recipe and can be made very easily.

Ingredients:

Corn flour – 2 cups
Besan Flour – 2 table spoons

Chopped Methi Leaves – 1 cup

Cilantro (Coriander Leaves) – 5 stems

Cumin seeds – 1/2 table spoon

Red Chilli pwd – as per your taste
Salt – as per your taste

Note: You can always vary the quantity and proportion of ingredients as per your taste. You even can include additional items if you feel they enhance the taste of the dish.

Preparation:

Cut methi and cilantro into very little pieces.
Take corn flour, besan flour, chilli powder,salt, cumin seeds, hinge, cut methi and cilantro into a bowl and mix them well.
Add water to this mixture and make as a thick batter without any lumps.
Take small amount of batter into one hand and press it. You can see the shape of this in the picture.
Repeat the process with the remaining batter.

Stove top:

Take a wide pan. Pour 2 table spoons of oil and heat it.
Then add the above made shapes to the oil. Wait for 2 minutes and close the pan with a lid.
Check and turn these shapes in between. Keep the lid closed till they are well coooked.
Switch off the stove and serve hot.
These are very tasty and can eat without any chutney or pickle.

Jantikalu(rice flour snack)

Healthy snack which can be made easily.

Ingredients:

Urad Dal – 1 cup
Moong Dal (split) – 1 cup
Pea Nuts – 1/2 cup

Rice Flour – 4 cups

Ajwain seeds – as per your taste
Sesame seeds – as per your taste
Butter – as per your tatste

Red Chilli pwd – as per your taste
Salt – as per your taste
Cooking Oil

Note: You can always vary the quantity and proportion of ingredients as per your taste. You even can include additional items if you feel they enhance the taste of the dish.

Preparation:

Take a pan and slightly fry urad dal, moong dal and peanuts without oil. Allow this to cool. Then transfer the contents
into a blender make soft flour(powder). As we added peanuts, sometimes it becomes oily and would not be soft. In that add little
by little hot water to make soft paste. To this mixture, add rice flour, butter, ajwain seeds, sesame seeds, chilli powder and salt.
Mix all these ingredients into a soft thin paste using hot water. We use hot water and butter for the crispiness of the snack.

Stove top:

Take a wide pan. Pour oil and heat it.
You need one instrument for making jantikalu. Put some dough into this to make circles.
Make these circles on a plastic sheet and then transfer into the pan.
Deep fry these in oil. Repeat the process with the remaining dough.
Switch off the stove.
