Carrot Rice


Carrot is an excellent source for Vitamin A. It is better to include this in our daily food. Carrot Rice is a healthy dish through which we can consume more servings of carrot in a day. Moreover children love this dish. And you need very less masala ingredients for this procedure than other regular rice or biryani items.

Ingredients:

Rice – 2 cups

Carrot – 4 (medium carrots)
Fresh grated coconut – 1/4 cup

Cilantro (Coriander Leaves) – 1/4 bunch
Green Onions -1 bunch

Cashew Nuts – as per your taste
Bay leaves – as per your taste
Cloves – as per your taste
Cinnamon stick – as per your taste

Ginger Garlic paste – 1 tea spoon
Coriander pwd – 2 tea spoons

Green chilli – as per your taste
Turmeric – as per your taste
Salt – as per your taste

Note: You can always vary the quantity and proportion of ingredients as per your taste. You even can include additional items if you feel they enhance the taste of the dish.

Preparation:

Grate carrot and keep it aside. Cut cilantro, green onions into very small pieces. Make a soft paste of ginger, garlic and green chillies using bender.

Stove top:

Take a wide pan. Pour 2 tea spoons of oil and heat it.
Add Bay leaves, cloves, cinnamon sticks and Saute them.
After that add grated carrot, ginger garlic and green chilli paste and let it fry for 5 minutes..
Then add grated coconut, turmeric and salt to this. Close the lid.
Keep frying until carrot loses it’s raw flavor and is nicely coated with all the spices.

Meanwhile cook the two cups of rice by adding four cups of water.

After carrot is done, sprinkle coriander powder and switch off the stove. Let it cool.
Mix the carrot gravy with cooked rice.

Take a wide pan. Pour 2 tea spoons of oil and heat it.
Add the cut green onions and saute them.
Then add cashew nuts and fry them until they are golden brown in color.
To this add carrot and rice mixture.
Switch of the stove and serve hot.

Note: You can prepare carrot gravy and can store in refrigerator for 3-4 days. Whenever you want you just need to cook the rice and mix with the carrot gravy.
